How soon can I cut head off sunflower and have viable seeds? the birds are starting to go after them and squirrels soon to follow can I cut after pedals gone seeds starting to be exposed? or should it be when things start drying up and I need to cover them?

Get them before the birds eat them all. If the birds are getting then, I would cut them and dry the seed heads.
