I never heard of "hidden weight." I am thinking it is when Eddie Z. shows up in as toga.

Hidden weigh is a randomly picked weight in each pound class

Example: I took all the 6 pound tomato weights put them in a hat Then I drew one weigh which was the 6.03 Montgomery so he was the winner
This gives almost every single grower a chance to win
