Subject: Chilis heat over time on plant

Do chilis get hotter the longer they stay on the plant or do they cool down? My son and I grill different chilis from the garden every year and always end up burning our mouths, but it is a father/son deal and we have a good time with it. Thanks for the advice.

For a hotter chili stress the plant a bit as the chile is growing (ie. water it only when the leaves start to droop due to lack of water)- more water thins the liguid inside the pods making for a milder chili so letting the plant stress a bit for lack of water will make them hotter.
