Yup, I cant believe topping like that is a real technique! But you are right, and some growers intentionally want the two side leaders from the cotyledons... And to be set back by 2 weeks. Unsure what advantage they think they get by doing so. Tomato growers like doing nonsensical things.

Varmints suck. They don't last long in my backyard after the 1st offense. If you have time left start a few more.

If it's any consolation, I've waged war with squirrels chewing my pumpkin vines and leaves for three years. My cousin (runs a commercial pumpkin patch) has lost roughly 600 plants so far this year to squirrels, digging up the seeds.
