Freaky things will happen, I think it's just hormones or chemical adjustments as the plant is trying to adapt itself to its environment. There are some chemicals the plant may absorb from the soil or the plant itself may create them, that act as mutagens.

These tend to go away as the soil and weather adjust towards normal.
