Im thinking the trim may be there to hold in place insolation board for the pumpkin to sit on? Just a guess.

Maybe the edge gives the opportunity to wedge something between the pumpkin and the edge of the pallet? SO that the pumpkin doesn't move around on the pallet.

I've travelled 2400 miles to Halfmoon Bay and back with 2 pumpkins sitting on pieces of the cheapest softest 2" styrofoam that was sitting on the deck of the trailer. No pallet. The soft styrofoam molds to the bottom of the pumpkin and spreads the weight more evenly. Zero damage.
