I was wondering if it would be a good idea to lay black plastic down where the pumpkins are growing, or would it put to much heat in the soil and hurt the plants...

Depends on your temps during the season. I saw plants "burnt down" because of the heat reflecting back from plastic. Don´t look for black plastic, look for the fine black mesh that stops the weeds but lets the water running through or you are in trouble to water the plant and with soil respiration. Also you need the make cuts where the vines develop to get them rooting, pretty much work.
