I'm having stems that are growing rapidly and decide to turn 90 degrees by themselves and split...any ideas why? There is no other stress on them other than rapid growth.

The splits appear at the very end where the plant has the most rapid growth. The vines are anchored well by their own tendrils and the spint portion is only 1/2" in diameter vs. 2-3" for the primary vine.
