I had forgotten these were still in the garden. I saw them the other day while tilling. I dug them up, some were bigger than I had thought they would be. I did not grow on raised beds last year. I guess my soil is soft enough now to grow them in ordinary rows.
To me parsnips are a very under-rated vegetable. Just peel off the skin, halve them, cut out the hard inner core. boil until soft (like a potato). Fry in butter until golden brown. Salt and pepper. It can't be beat.
